A sweet dish, served between the cheese and fruits in a multi course meal.  In modern pastry, an entremet is often composted with a biscuit, a mousse and a crémeux , with either fresh fruits, a crunchy layer or other textures. It is usually eaten cool, not quite at room temperature nor straight out of the refrigirator.
