- Do you serve flavoured lattes?

We do not use flavoured and sweetened syrups in our coffee like vanilla, hazelnut, etc. We do offer mocha and caramel lattés, made with the Maison Routin 1883 chocolate and caramel sauces.
- What sauces do you use in your mocha and caramel lattés?

We use the Maison Routin 1883 sauces.
- May I have an extra hot latté?

We will steam the milk as much as possible; however, milk may only be warmed to a maximum of 57-63°C for an optimal coffee flavour. Should we exceed this temperature range, the milk will “burn” and become rancid.
- May I have a “large” coffee?

Depending on the coffee you order, it will be served in either an 8 oz (235 ml) or 12 oz (355 ml) cup. Please refer to our coffee menu when you place your order.
- Do you serve drip coffee?

All our coffees are espresso based. The closest to a drip coffee will be an Americano, served in a 12 oz (355 ml) cup.
- Can I add colours, special decorations or fondant to my cake order?

Aside from the decorations made by our Pâtisserie Team, we do not place other types of decorations on our cakes, nor do we work with fondant icing.
- Can I order a custom cake?

We offer a variety of cakes, tarts and entremets, serving from one to 12 people (not all items are available in the larger size). We are enable to make custom cakes, including wedding cakes.
- Do you do wedding cakes?

We are unfortunately unable to create any custom cakes at this time. Please ask your wedding planner for referrals to other bakeries in the area.
- Can I have “Happy Birthday” written on my cake?

Our Pâtisserie Team will be happy to write a small message on your cake, provided you give us the details when placing your order over the phone, at least 4 days before pickup (14 characters maximum).
We also offer handmade chocolate “Happy Birthday” stamps in various colours; please ask us which are available when ordering over the phone, or when you are in the boutique.
- Do you make birthday cakes?

We offer a wide variety of cakes and entremets in individual or larger serving sizes. Any of these may be served as a birthday cake.
- Why do I need to order 4 days before the day I want my baked goods?

As all of our products are handmade onsite, we require a minimum of 3 full days for production. Since these are full days for production, the 3 days does not include your pickup day.
For example, if you want to pickup your order on Saturday, you must place your online order by midnight on Tuesday. If you want to place your order by phone, please make sure you call before we close on Monday.
- I placed my online order on Wednesday, I cannot select Friday on the checkout calendar.

When placing your order online you will note a calendar pop-up at checkout, with the next available dates for pick up* (always counting the 3 full days required for production, not including the pickup day); please take note of that date as you proceed to the checkout page as the system does not include it in the confirmation email sent to the email address you have provided upon checkout. If you do not see your confirmation email, please check your spam folder.
For example, if you place your order on Wednesday, the first date you will be able to select at checkout will be Sunday.
* Certain products may require more than the regular 3 full days notice period.
- Can you put this item aside if I pay it right now?

We are happy to serve our clients on a first-come, first-served basis onsite. We do not place any items aside within our 3-day order notice period. Please come in and choose from the variety available at the moment of your visit. If you know your choices in advance, we encourage you to pre-order with a 3 full days’ notice to make sure your preferred baked goods are set aside.
- Can I use my Le fournil gift card while ordering online?

All our gift cards are physical cards, and they can only be processed onsite.
- Are all your products made on site?

Yes, we hand make all our breads, viennoiseries and pastries on site.
- Why do you run out of bread, croissants or cakes?
-
The production of handmade, artisan-crafted baked goods cannot be rushed; we, therefore, have to estimate the quantities to make at least four days ahead. We look at what events are happening in Canmore and area, the weather, and the season but ultimately, we cannot be sure what and how much our customers we purchase on any given day. That is why we highly recommend that you place an order three days before pickup, especially if you place a larger orders, are looking for something specific or cannot come first thing in the morning.
- Why can’t you make more bread and viennoiseries when you run out?

To get the full flavour profile of our breads and viennoiseries, we need to allow fermentation of 12 to 48 hours. We therefore cannot make more at the last minute.
As our products are always freshly baked, we do not sell day old products.
- Which one is your most popular?

It is alway best to select a product according to your taste rather than by how much we sell. Our staff will guide you to the items that best suit your taste buds!
- Where are your other ingredients from?

We strive to source our ingredients from as many local farmers and suppliers as possible. However, due to the local climate, some fresh products are imported, and some of our specialty pastry ingredients, like chocolate, come from various parts of the world.
- Where is your flour from?

Our flour is made from Canadian wheat (Saskatchewan and Alberta), and is milled in Lethbridge. We may also use other flours from Alberta.
- Where is your butter from?

We use different butters for different applications; all our butters are from Canada, using milk from Canadian cows only.
- Do your products contain nuts, dairy, gluten or other allergens?

Most of our products contain or are exposed to wheat flour, rendering them not gluten-free. If an item is made with something other than glutenous flour, we will mention it in its description. Other products may contain nuts, dairy, eggs or other allergens, and all may have come in contact with these allergens at any point during production. Please refer to each product's ingredient list for more information.
- Is the gelatin animal or plant-based?

Our gelatin is animal-based (fish).
- Are any of your products, vegan?

As our main ingredients are flour, butter, milk, eggs and cream, our products are generally not vegan, though most of our breads are; we may at times have some vega pastries.
- Are there milk and eggs in your bread?

Most breads we make only contain flour, water, salt and yeast (whether from levain or commercial). Some breads will include eggs, butter, oil, nuts and fruits. Please refer to the ingredient list of each product, or ask our staff.
- Are there additives or preservatives in your products?

We do not use additives or preservatives in our production.
- Do you have gluten-free breads and pastries?

As a traditional bakery, we cannot guarantee that any of our products are gluten-free, due to potential cross contamination. We have certain products that are made without glutenous grains, but they are not gluten-free.
- Can I pick up my order at the time of my choosing?

Orders will be ready to be picked up on the day scheduled during our opening hours. Orders not picked up by then are forfeited and will not be replaced or reimbursed.
- Why is the pick up day so far from the day I placed my order?

All of our products are handmade, using time-proven artisanal techniques. The production period for bread and viennoiseries is at least 3 days, and longer for cakes and other products. Our website takes these 3 days into account and will only show you the dates on the calendar that fall outside of this period. (You will see this calendar as you proceed to the check-out page).
- Where can I choose to pickup or get my ordered delivered?

Once you have filled the form with your personal information, the system will automatically select pick up as we do not offer delivery at the moment.
- I can’t make it today to pickup my order. Can you hold it for another day?

Unfortunately, we cannot hold orders of freshly baked products for pickup on another day than the initially scheduled one; under extenuating circumstances, we may keep your order for pickup the following day (we will give you the products baked on the initially scheduled pickup day only).
