- Do you serve flavoured lattes?

We do not use flavoured and sweetened syrups in our coffee. We are happy to serve traditional Italian-style espresso coffees
- What chocolate do you use in your mocha?

We use the chocolate sauce 1883 from the Maison Routin.
- May I have an extra hot latté?

We will steam the milk as much as possible; however, milk may only be warmed to a maximum of 57-63°C for an optimal coffee flavour. Should we exceed this temperature range, the milk will “burn” and become rancid.
- May I have a “large” coffee?

Depending on the coffee you order, it will be served in either an 8 oz (235 ml) or 12 oz (355 ml) cup. Please refer to our coffee menu when you place your order.
- Do you serve drip coffee?

All our coffees are espresso based. The closest to a drip coffee will be an Americano, served in a 12 oz (355 ml) cup.
- Can I add colours, special decorations or fondant to my cake order?

Aside from the decorations made by our Pâtisserie Team, we do not place other types of decorations on our cakes, nor do we work with fondant icing.
- Can I order a custom cake?

We offer a limited type of entremets. Our Pâtisserie team will evaluate if that custom order is feasible and fits within our style and production schedules.
- Do you do wedding cakes?

Our Pâtisserie Team would be happy to help you for such a special occasion; depending on the season and production schedules. Please note that we do not work with fondant icing, sugar decorations, etc. We require a minimum of 3 weeks’ notice for any large (more than 10 servings) custom orders.
- Can I have “Happy Birthday” written on my cake?

Our Pâtisserie Team will be happy to write a small message on your cake, or we can also place one of our handmade chocolate “Happy Birthday” stamps. Please ask your server for the available colours upon ordering your cake.
- Do you make birthday cakes?

We offer a wide variety of cakes and entremets in individual or larger serving sizes. Any of these may be served as a birthday cake.
- I placed my online order on Wednesday, but I want it for Friday.

When placing your order online you will note a calendar pop-up with the next available dates for pick up (always counting our 3 full days required time for production); please take note of that date as you proceed to the checkout page. You will also find the date you have selected in the confirmation email sent to the email address you have provided upon checkout. If you do not see your confirmation email, please check your spam folder.
- Can I use my Le fournil gift card while ordering online?

All our gift cards are physical cards, and they can only be processed onsite.
- Are all your products made on site?

Yes, we hand make all our breads, viennoiseries or pâtisseries on site.
- Why do I need to order 3 days ahead?

As all of our products are handmade onsite, we require a minimum of 3 days for production.
- Why do you run out of bread, croissants or cakes?

The production of handmade, artisan-crafted baked goods cannot be rushed; we, therefore, have to estimate the quantities to make at least three days ahead. We do look at what events are happening in Canmore and area, the weather, and the season but ultimately, we cannot be sure how many customers we will have on any given day, nor how much they will take.That is why we highly recommend that you place an order three days before pickup, especially for larger orders, if you are looking for something specific or if you cannot come first thing in the morning.
- Why can’t you make more bread and viennoiseries when you run out?

To get the full flavour profile of our breads and viennoiseries, we need to allow enough fermentation time; as our products are always fresh, we do not freeze breads and viennoiseries, nor do we sell day old products.
- Which one is your most popular?

All our breads, viennoiseries and pâtisseries are popular their own way. Our staff will guide you to the item that suits your preferences.
- Can you put this item aside if I pay it right now?

We are happy to serve our clients on a first-come, first-served basis onsite. We do not place any items aside within our 3-day order notice period. Please come in and choose from the variety available at the moment of your visit. If you know your choices in advance, we encourage you to pre-order with a 3 full days’ notice to make sure your preferred baked goods are set aside.
- Where are your other ingredients from?

We strive to source our ingredients from as many local farmers and suppliers as possible. However, due to the local climate, some fresh products are imported. Some of our specialty pastry ingredients come from various parts of the world.
- Where is your flour from?

Our flour is made from Canadian wheat (Saskatchewan and Alberta), and is milled in Lethbridge. We may also use other flours from Alberta.
- Where is your butter from?

We use different butters for different applications; all our butters are from Canada, using milk from Canadian cows.
- Do your products contain nuts, dairy, gluten or other allergens?

Most of our products contain or are exposed to wheat flour, rendering them not gluten-free. If an item is not made with flour, we will mention it in its description. Other products may contain nuts, dairy, eggs or other allergens, and all may have come in contact with these allergens at any point during production. Please refer to each product’s ingredient list for more information.
- Is the gelatin animal or plant-based?

Our gelatin is animal-based (fish).
- Are any of your products, vegan?

Our main ingredients are flour, butter, milk, eggs and cream. However, some of our breads are. We also have one pâtisserie “Passion Tropical” which is vegan. Please note, that this creation is made in the same kitchen and there might be some cross contamination.
- Are there milk and eggs in your bread?

Most breads we make contain only flour, water, salt and yeast. Some breads will also contain nuts and fruits. Certain breads, like the Challah, contain eggs, and oil or butter; our buns also contain milk and eggs. Please refer to the ingredient list of each product or ask our staff.
- Are there additives or preservatives in your products?

We do not use additives or preservatives in our production.
- Do you have gluten-free breads and pastries?

As a traditional bakery, we cannot guarantee that any of our products are gluten-free, due to potential cross contamination. We have certain products that are made without glutenous grains, but they are not gluten-free.
- Can I pick up my order at the time of my choosing?

Orders will be ready to be picked up on the day scheduled from 8 am to 4 pm. Orders not picked up by then are forfeited and will not be replaced or reimbursed.
- Why is the pick up day so far from the day I placed my order?

All of our products are handmade, using time-proven artisanal techniques. The production period for bread and viennoiseries at least 3 days, more for cakes.Our website takes this 3-day period into account and will only show you the dates on the calendar that falls outside of this period. (You will see this calendar as you proceed to the check-out page).
- Where can I choose to pickup or get my ordered delivered?

Once you have filled the form with your personal information, the system will automatically select pick up as we do not offer delivery at the moment.
- I can’t make it today to pickup my order. Can you hold it for another day?

Unfortunately, we cannot hold orders of fresh baked products for pickup on a later date than scheduled; under extenuating circumstances, we may keep your order as is for pickup the following day. Please note that we cannot give you fresh products in this case.
